Diamond Jim Brady, the railroad magnate, was known to have a three-pound steak every night, as part of a ten-course gluttonous feast. The tradition of great New York City steak houses has continued to this day with many of its culinary champions remaining the same. With this legacy in mind, I have spent considerable time and weight gain in search of “The Perfect Steak House.”
